My speciality for winter warmers is a welsh stew with good old leeks, potatoes, parsnips, carrots, onions, swede and good old beef diced up and all slowly cooked in a gorgeous broth for at least 5 hours on a low heat. wonderful to warm your hearts (and your fingers and toes) yum yum

mine is easy
one tin of red salmon(bones and skin removed)
one tub of cream cheese
2 teaspoons of horseradish sauce
black pepper to taste
mix all ingrdients in a bowl spread on toast or make into sandwiches.
this also makes a suppr filling for vol-au-vents.

Baked Potato and Chilli Con Carni. 500gms Lean Minced Beef, Tin of Chopped Tomatos’s, Beef Stock Cube, Chopped Onion, Carrot chopped too if wanted I add strips of Green/Red Pepper to it sometimes too. Tin of Value Kidney Beans, Chilli powder to taste, I use about 1tsp.
Put you Oven on at 200C and wash and prick your potatos. I cover my hands in a drop of oil and salt and rub the poato’s before I put them in the Oven. You are guranteed a crispy Skin if you do that. YUM!
Put your Potato’s straight in the oven as soon as it has heated up.
Then fry you Onion in a little oil, brown your mince and add the tinned tomato’s and chilli, stock cube in about a quarter pint of water, season. Sit back and relax for about an hour. Add the strained Kidney Beans about five mins before end of cooking. I serve with a little Creme Fresh on top or a little Greek Yogurt, even grated Chedder Cheese is yummy too. Split your potato’s down the centre and add butter salt and pepper top with Chilli Con Carne. You can serve it with rice. This really is a cheap, filling and yummy Winter Warmer. I sometimes just bung all the ingreadients into a slow cooker and then it is ready when I get in from work.

Home Made Rice Pudding.

I cheat with this one to speed up the time it takes in the Oven. I cook the rice in a pint of milk in my microwave with about a tablespoon of sugar and Vanilla pod or a quart tsp of cinnamon. I then transfer it into an ovenproof dish. You can add a small handful of Sultana’s at this stage if you want this really is nice. I then cook in a middle oven at 180C for about 25 mins until the rice has absorbed all the milk and cooked through completely. You will have a lovely Brown top which really is lovely. I sometimes use Brown Sugar when I cook it first in the Micro wave I also sometimes shake a little Brown suger over the top before putting it into the Oven. This really is Comfort Food at it’s best. It tastes just like my Gran and then my Mums! Yummy

A very Quick and easy Winter Warming Comfort Food Recipe is this:- Stew some Apples any you like in a little suger with a little water in a pot. Roll out some puff pastry lay a metal plate onto it and cut around the edges. Put Apple mixture in centre. Dampen the pastry edges with a litle Milk or milk and egg beaten. Then Roll out another circle for the top. Cover the Apple mixture and go around the edge with a knife. Seal the edge all around your plate pie. ( I put sultana’a and a little cinnamon in the apple mixture sometimes, it then tastes a bit like apple strudel then) I then put the pie dish on a baking tray at 180C and Bake for 15-20 mins until the crust has risen and is golden. Then Serve with Custard or Ice Cream. It is really Great as a Winter Warmer Comfort Food with Custard. Yummy!

Sausage, black pudding and parsnip bake,it is delicious trust me.

6 sausages
3 parsnips
2 black pudding sausages(small)
2 onions
250ml chicken stock
oil

Chop onions into chunks, fry in roasting tin until soft, then add the sausages which have been sliced into inch long fingers and brown, do not burn!!. then add the parsnips which have been cut into big chunks and the black pudding which have been sliced and brown as well, then add the chicken stock and let it bubble on the top of the stove for a minute before putting it into the oven in the middle at 200oc for about 40 minutes or until the stock as reduced to a nice thick gu. Delicious, honest, though the don’t need a big plate as it is very filling and satisfying
