Hola 888senoras and 888senors!

As you must be aware by now, we are going ALL MEXICAN today in honour of the country where this year’s Bingo Cruise is heading off to and where TWO lucky roomies can win themselves a place on that trip!

In order to get yourself some BIG Sombrero Points towards your final score and perhaps a place in the final games, I want you to send in your recipes for Traditional Mexican Dishes. Every valid entry receives 20,000 Sombrero Points. Every entry that comes with a picture of the final dish being enjoyed by the roomie will get 4,000LPs too!!

You have till the end of the day to send me the recipes and pictures. If it is just a recipe, please add to the blog, if you are sending a picture as well……please send it to agent008email@gmail.com . Don’t forget to write down your alias with your answer too!

Orange Flavored Fried Bananas
Ingredients –

4 semi-ripe bananas
1 cup dark sugar
4 tablespoons butter
Juice of 2 oranges
½ cup powdered sugar
½ cup sour cream
1 tablespoon grated orange rind
½ tablespoon Grand Marnier (optional)

Preparation:

Peel the bananas and cut them once lengthwise then half once.

Heat the butter in a frying pan and fry the bananas on all sides until golden.

Mix the rind, juice, Gran Marnier if you are using it and sugar together and pour this mixture over the bananas.

Simmer for 10 minutes over a medium heat.

Transfer the bananas to serving bowls.

Combine the powdered sugar and sour cream and pour this mixture over the bananas.

Serve at once.

(Serves 4)

Baked ChickenChimichangas.
Chop 3 boneless, skinless chicken breasts into narrow strips.
Saute 1 onion and 1 green pepper in a small amount of oil then place in a medium bowl and add 1 small can/jar green chillies and 2/3 cup salsa.
Stir fry chicken strips with cumin,salt,pepper and garlic for 3-5 mins.
Prepare 8 tortillas according to pack instructions.
Place 1/8th chicken and 1/8th onion mixture just below middle of each tortilla. Cover with cheese and fold up bottom, then sides, then top.
Spray the wrapped tortillas with oil and lay them on a foil covered and oil sprayed baking sheet.
Bake for 8 minutes at 220/gas mark 7 then flip and bake for 5 mins. more.
Serve with – Spanish rice, black olives, sour cream, more salsa, green salad….

Chicken Enchildas with Cheese

Ingredients
2 chicken breasts, cooked and shredded
2 tablespoons olive oil
1clove garlic, crushed
16 ounces tomato sauce
4 teaspoons salt
4 teaspoons sugar
1whole jalapeno pepper, canned or fresh
1to2 large tubs double cream
4 cubes chicken stock cubes
12 tortillas wraps
6 ounce cheese, monterrey jack, grated
1large onion, chopped

Directions:

Chop the jalapeno pepper and take seeds out. Cook onion in oil but do not brown. Stir in garlic, tomato sauce, salt, sugar, chicken and
peppers. Cover and simmer for 5 minutes. If its still runny add flour.

In a large saucepan, heat cream and dissolve chicken stock cubes in it. .
To make the Enchiladas
Dip a tortilla in the cream mixture. Place on a flat surface and put two to three tablespoons chicken mixture in the middle and roll up.

Place rolled tortilla, seam-side down in baking dish. Do the same with all 12 tortilla’s

Pour all remaining cream mixture over enchiladas and cover with grated cheese. Bake in a preheated 350 degree F/ 180 C oven for 25-30 minutes, until cheese is melted and browned.
